Chives uses local to “showcase the best of the Maritimes,” says chef and co-owner Craig Flinn. He also believes eating local to be more ethical while offering a higher calibre of quality. The roast lamb from Wood’n Hart Farm is “very good at showcasing the best of the seasons,” says Flinn. The dishes sides change with the season’s provisions—roast squash, new potatoes or summer asparagus. Even for regulars, no dish is ever the same. “We work with the farmers on what they can provide,” says Flinn. Also co-owner of bronze winner 2 Doors Down, Flinn is glad to see Haligonians responding to their local mandate, saying “if the awareness is there people will make the effort to buy local more.”
