Why is it that some food establishments have frozen fries and other have fresh cut fries? Fresh cut fries are WAY better than frozen processed ones and to buy the potatoes to make home cut fries is cheaper than buying the frozen ones. What gives? Just sayin’. —Fry Guy

the ladies at that corner shack in west dover cut their own chips. mountains of them. by hand. sometimes there’s an old guy that does it. only place i’ll order them.
Home made chips (not fries FFS) are the best, you need a real chip pan, with a mesh basket, a shitload of lard, yes artery clogging lard, a sharp knife, some russet potatoes, and most importantly, be somewhat sober – and malt vinegar when they’re done.
it’s for a thing called profit. frozen is usually cheaper than fresh. and also takes less time to prepare and fry. i prefer the fresh, but when you have to peel, cutup, then deep fry, it takes time.
For the places that switch in between them, I’ve been told it’s because they sometimes can’t get decent potatoes. Frozen’s a bit better than a mouthful of deep-fried dry rot.

at a buck a (1 kg) bag, you’d get at most 7 lbs.
So it is looking like the home cut fries are winning by a landslide! If you peel em… you can make potato skins – double up on the profit or leave the skin on and get the best fry going. They got these potato slicing rigs for dummies. You jam a potato in and pull down the lever… voila… home cut fries. anybody who gets their finger caught in that is pretty dumb.
