    What with the tattoo and sailors.. I was about to hit up the local costume shop.
    much to my shagrin, someone had already thought of that

  3. what the hell, checking how the sizes are roughly determined, I’m going to guess a 44 R…
    but I’m not certain because my shirts are a 17 Long.
    will check tonight… basically because this is probably something I should know.

    I like spoons. They help with cereal.

    and grapes are the chips of the fruit world… it’s true.

  5. are you being un-chained from your desk soon? the boyos are going to have a few beers, i don’t think i can shut the shop early…maybe if we all get really hammered it will dissuade the public

  6. nope, i just put the ribs in the oven for 5 hours…the bear and boy are snoring and i am up feeding various critters^^

  8. oh, and I hope those ribs are covered…
    and with plenty of sugary, bbq’y liquid.

    I do like a reverse braise…. where I essentially ‘poach’ them for like 3-4 hours until tender, then broil the sauce on at the end.

  9. not to worry zZz i am always on nautical time…drinks are always timely^^^i used a spice rub on the back ribs left them ovenight, cook in oven, then finish on the bbq. the boy likes the gooey sugary ribs. do you at least have windows in your prison?

  10. I do.. and they’ve all conveniently been covered with that plasticy, fogged up look (secure facility) so I can’t see outside either.

    I love bbq… but it’s tough to get a nice, sticky coating on the top when you need to put them face down to get that caramelization so I stick with the oven broil.
    to each his/her own though.

  11. wow painy you do back ribs for 5 hours what temp like 250f? I’ve only done like side ribs that long but hey if it works it’s all good ; bone a pateet 🙂

  12. I’d say there are a few petite things I’d like to bone but I fear I’d be coming off more desperate than LS.

    and yeah, 250… even 230 for that long should do it…
    just have to make sure there’s plenty of liquid to keep em moist…

    moist… moist… moist…. moist… moist…. love that word.

    rubbing them the day before is sure to infuse some good flavor in there.
    Any secret to your rub painey?

    mine’s 5:3:1:1 of
    brown sugar:kosher salt:cayenne:my special mix of herbs I love the mostest.

  13. in my experience americans are astoundingly fun and way better than canadians in almost every realm, sans syrup production. glad you’re all finally realizing that polite doesn’t end at opening doors and nodding allooooo.

  15. i have tried many methods of cooking ribs…but according to the boyandbear they were the best they ever had. much groaning and gnawing and growling. the rub had cayenne, paprika, cumin, grain mustard, salt, pepper, apple juice, hot sauce and a little olive oil

  17. Back in the late 80’s I was lucky enough to be down on the waterfront on a clear crisp late winter morning. NATO’s Standing Naval Force Atlantic was putting to sea after a 5 day visit. The water in the harbor was like glass and as the American vessel in the squadron was passing Historic Properties, even though it was in the middle of the harbor, you could hear that “Farewell to Nova Scotia” was playing on the ship’s p.a. system.
    A really nice moment.

  18. The brits were nice ‘n’ friendly too, I found… I had one American sailor say to me mid conversation when I said I had seen the British Ark Royal “MY boat is bigger than theirs”… I’ve been laughing at that line ever since.
