i enjoy fries more than the fish but only if they’re fresh cut, and clean oil is a must. if you’re deep frying the bulk of your menu, do it right
Right on, Painey, clean fat is a must! I went to one F&C joint a few months back – there was greasy pool of brown oil under my order – never mind what the meal looked like (dark & oily) – never went back and now understand why the place is virtually empty whenever I drive by.
The only thing that’s worse is a Bigmouth Bradshaw owner of a certain F&C shop in HRM who yaps at you while you’re eating – drives me nucking futs when someone has no volume control.
Frozen fries, can suck my chocolate salty balls. If properly cutting, blanching, and frying, fresh cut fries is beyond your skill/commitment level, then you won’t get my business twice. Its like going out for eggs benny, and getting powered sauce. Poor showing, indeed!!!!!

My favorite spot for Fish and Chips is the place that was named as the ‘Country’s Best Fish and Chips’ on Live at Five a couple weeks ago. I guess it’s ok to name the place since it was on Live at Five: John’s Lunch on Pleasant Street in the fine city of Dartmouth! mmmmmm mmmmmm Good!!!

Fresh oil makes so much difference! I love when the outside is crispy and the inside less so a bit. I do oven fries/sweet potatoes fries with lil olive oil, salt/pepper, maybe garlic powder…
My chef’s “secret”? If the recipe says 350, I do 360. Stoopedist thing, and may even be OCD, but once I started doing that for everything, my Success Rate at cooking went through the roof.

Yes fresh cut fries and decent oil/fat. A rare combo to find these days. Ah, for the days of the chippies on the Commons during the horse races and ball games (and a few other places) years back. Perhaps not the best oil and likely plugged many a person’s arteries – but damn they were usually HOT, crispy on the outside and delicious. Some of today’s vans come close but there is a difference likely in the oils used. The old ones probably used lard, which was not deemed to be a bad thing in the 50s/60s. Also, perhaps there are different varieties of potatoes now as well.
One way we used to keep our fries crispy for our take out customers is to tell them to keep the corner of their paper bag opened a bit because its all the hot goodness that starts making it sog up a bit. Any business that changes to frozen fries I would think would start getting complaints.. but this goes to show you.. customers suck and never stop complaining! I will leave a place if they don’t server fresh fries.. I can make the frozen ones of home anytime.. or when I’m craving frozen fries its usually connected to some fast food joint I’m craving like McDicks.
I used to resort to McDicks when I wanted a salt fix – I think if I had them now (instead of pickin’ off my kid’s order when said kid was a little ‘un), I’d be spitting ’em out like potato nails. The salt on those suckers can range from lightly salted to a fucking salt lick, depending on who’s shaking the salt shaker.

The ‘open the corner of the bag’ is very good advice – that’s what we’re always told by our favourite F&C joint who serves fresh cut fries (with skins). If you don’t, you can make a nifty greasy softball out of a bag of fries (the older the grease, the better for molding). The benefit is you don’t really want to eat the fries after that.

I make delish. homemade sweet potatoes fries.I find the trick is to blanch the potatoes before deep frying.
Remember it takes maybe 10 minutes or so to fry homemade fries. Use a knife to cut them into shoestrings, place in hot, clean oil and in 10 minutes nice, fresh, crispy fries as intended. Don’t forget to shake off any excess oil.

What is the issue here in the fry dilemma? Why, in other words, is it a “dilemma” at all? I see three embedded questions in the fry dilemma, that of quality, aesthetics and, finally, that of the owner’s pragmatism.
The guy who owns the diner claims that fresh-cut fries are “better” but does not elaborate. How are fresh-cut fries better than frozen? Is it possible to tell the difference in, say, a blind tasting? If so, on just what criteria is the determination made? Or is this just another kick at the role of technology in food production generally? So the question of “quality” is in abeyance until some coherent resolution is forthcoming.
The guy who owns the diner claims that frozen fries in the take-out container are more aesthetically appealing since, unlike the fresh-cut fries, they do not go all mushy. I think we can award the aesthetic decision here to the frozen fries. Aesthetics trumps “quality”. But what about the background philosophy of the guy who owns the diner? On what basis did he find an answer to the fry dilemma?
Unsuprisingly, the background philosophy of the guy who owns the diner is undiluted pragmatism, the view that what sells wins the day. In addition to the fact that frozen fries do not all mushy, the customers often complain that the his customers often complain that the fresh-cut fries are over- or under-done. So he said, ” to hell with it. Frozen you get.” That was his answer to the fry dilemma. But does his answer “go through” as the expression has it?
No it doesn’t. Presupposed in the fry dilemma is the reason why people go to diners in the first place. What sort of low-lifes eat at diners like this? Why do they eat this junk at all? In respect to the guy’s diner and the guy himself I say, “To hell with them!”

MM: I think it is all just a matter of personal preference. Personally, and I know this is not a popular view, but I love home cut fries that are greasy and only half done. A little firm in the centre. Served soggy in a bag with salt and vinager. I know, I know! But, again, it is just my personal preference. Home cut fries are great but when they are all fried up dry and crispy they are no better than the frozen ones. MM: I got such a laugh out of your last paragraph. True it is!

that’s the trick in restaurants too boru, but you should blanch them in the oil at 300 , cool and drain. then fry them at 350-375 when ordered, works like a charm. trust me i know what i’m talking about

It does contain meat, all %100 of it. They get such a bad reputation about it, but the whole “mcdonalds doesn’t use meat” is untrue. Its all meat, all of it!!! The old meal worm rumour will never die. But anyone who believes in it should look at the cost of protein supplements (ie; mealworms). Meal worms cost over $4 a pound, whereas McD’s gets their beef for less than $2 a pound. Why would a company use a filler that costs more? Then the other argument I love is the fry one. Why don’t McD’s fries get mouldy or turn gross? Well, no deep fried frozen fench fry will, all brands. Try it at home please.

In my “The Fry Dilemma” (03/31, 10:09AM) I analyzed the issues underlying the dilemma relating to the relative merits of fresh-cut vs. frozen fries. On the basis of three criteria – their respective qualities, aesthetic appeal and finally, the pragmatic background philosophy of the guy who owned the diner- I rejected the entire dispute as lacking in coherence. I told the low-lifes who frequent such diners as well as the owner himself to go to hell. But is that the end of the story? No, it is not. Rather, it is now time to raise the level of play, to examine the general philosophical implications of the issue. What are these implications?
I believe they can be found in the materialist 19th. century German philosopher Ludwig Feurerbach (1804-1872) and , in particular, his famous pronouncement to the effect that “You are what you eat.” But how does this relate the “The Fry Dilemma”? It is simple. Both fresh-cut and frozen fries are made of potatoes. Linking Feuerbach’s assertion to “The Fry Dilemma” we must ask, if you are what you eat and, among other things, we eat potatoes, are we in some sense constituted by them? I believe the question can be engaged at two levels.
(a) The Physical Level: There can be no question that at the physical level, after a tub of fries, our carbohydrate level – relative to a period without having eaten a tub of fries – rises measurably. Presumably, after extended periods in the diner, such levels increase proportionately to the point where we become carbo-obese. So in that sense we would have to agree. You are what you eat. However, Feuerbach was a philosopher and not a dietician. He must mean more than this. He does.
(b) The Ontological Level: Feuerbach was a materialist in the sense that he maintained that what you see is what you get. That is all. All religion and, curiously, all philosophical reflection as well, was equally illusory. But – and I’m sure the rest of you see the upcoming self-contradiction – if all there was to Feuerbach was what he ate then how did he come to the insight that that was the case? By what process of meta-cognition did he arrive at the conclusion that he was only what he ate? More broadly, if the conditions of his being-in-the-world precluded any insight into his own ontological state, how was he able to make the ontological assertion that, “Man ist was er isst?” Clearly, he cannot. Consequently, his materialist philosophy, like Feuerbach himself, must be rejected.
