“Some people get really excited about fish tacos, I get really excited when I can pay my HST,” laughs Tara MacDonald. Funnily enough, the creator of one of the greatest foods in town, the Two If By Sea croissant, says it takes a lot more than great food to make a restaurant. She’s been the co-pilot at TIBS alongside Zane Kelsall for five years, and finds herself increasingly drawn to the management side. “With any good business partnership you gravitate towards what you’re good at. It just sort of fell into place that way,” says MacDonald. “I was always in the back, with my back turned, pounding out things. It’s kind of a metaphor.”
