East Coast Outfitters
If you're not in the Lawrencetown neck of the woods, try ECO. Mostly known for its incredible sea kayak tours, the Lower Prospect company also offers stand up paddling lessons (three-hour intro and advanced level classes, a one-day stand up coastal journeying course and a two-day flatwater paddling instructor course) and rents boards by the hour, half-day or full day (for this you'll need basic safety training and 24-hours notice).

Happy Dudes
It's a Surf Emporium, yes, but SUPs are in high demand here, too. At both the Lawrencetown location and its Martinique counterpart, you can rent a paddleboard for a half day ($40) or a full day ($50)—add an extra $10/15 if you want a wetsuit.
