Double Purpose Christmas Spice

Executive chef and Culinary Team Canada member Luis Clavel offers up a versatile recipe that’ll give your turkey, your stuffing—or both—an extra kick.

Ingredients
1 tbsp sage
1 tbsp summer savory
1 tsp thyme powder
1 small pinch of nutmeg (freshly ground)
1 tsp Worcestershire powder
1 tsp sea salt
¼ tsp black pepper


Method
This will yield a 20-pound turkey for internal and external surface. Only use three-quarters of the yield on the spice blend—save the remaining for the stuffing.

Dressing spice rub
Utilize the remaining spice for the stuffing—make your favourite family stuffing recipe and enhance it with this spice rub. My suggestion is add cooked bacon morsels, dry cherries and apricots, and perhaps change your bread to brioche. Now take your dressing to the next level.
