Ever wondered what success tastes like? Not metaphorically, silly---literally! Take that curiosity over to the Mosaic Social Dining Lounge (1584 Argyle), and sample bartender Cooper Tardivel’s award-winning creation, the True North martini. Tardivel recently won the Bols Canadian Cocktail Championship, a competition sponsored by Amsterdam-based liquor and spirit company Bols (which holds similar national competitions all over the world). Competitors were challenged to create a cocktail that symbolized their country, in drink form. Eighty-six bartenders sent in their drink recipes (all featuring Bols products, natch) to the Canadian competition; the pack was then winnowed down to five finalists, and then to one: Tardivel. The bartender created the True North using a maple dessert wine from Nova Scotian vineyard Jost, and garnished it with maple-candied apple balls. To make a “Canadian” drink, “a lot of bartenders would choose rye , because rye is a distinctly Canadian spirit,” says Tardivel. “I went the maple syrup route, because I thought the rye would be too predictable.” Tardivel’s been bartending for 11 years, and sees bartending as a “reactionary kind of art form”: he likes working with customers, to create “one-off unique drinks on the spot,” he says. “It makes the whole experience a little bit more special.” As the Canadian Bols champ, Tardivel’s currently competing online against winners from 25 other countries; the ten national champs who receive the most online votes will fly to Amsterdam to compete in the Bols Global Shake-off, for the title of Cocktail Master.
