Mic Mac Bar & Grill’s GM Joël Chiasson spits honesty when asked about what makes the institution a fan favourite: “We’re not about doing fancy dishes or crazy culinary design. We skip to the basics, meat and potatoes.” And like PSLs and Grey’s Anatomy have taught us, basic isn’t always a bad thing. People flock to the Mic Mac for ribs, burgers, fishcakes and a bad ass brunch and Chiasson says consistency is the number one this his staff is striving for. “We want the first dish that goes out to be the best dish every single time. We accept mistakes, but we just don’t serve them to the customer.”
