If you’re wondering what makes these noodles stand out from the bunch, it’s all in the name, really. “A mano" literally means by hand—and that’s the secret to these gold-winning pastas. “We do make it daily by hand, we have a small kitchen and a small restaurant, it’s not mass-produced.
