Gio at The Prince George wins gold again. Despite being part of a hotel, food and beverage manager Shawn Lewis says that 60 to 70 percent of its customers are locals. “We’ve always maintained a standalone restaurant feel,” says Lewis. Chefs incorporate ingredients that are “eclectic, from around the globe,” resulting in a menu of global cuisine. Try the elk tenderloin wrapped in elk mousse, finished with caul fat and seared rare, with porcini mushrooms, oyster mushrooms and coco jus (you might need to Google it first). Offering a beautiful and entertaining environment, Lewis says at Gio, it’s not just about good food, “it’s the whole package.”
