“We’re enthusiastic about our fries,” says Bud The Spud’s Jody LeBlanc, and it seems that thousands of Haligonians agree, according to our polls. The OG of the city’s food truck scene, Bud been on the road in some shape or form for 40 years, a history that’s helped it find the key to French fry success. “It’s probably a two-prong thing. It’s not rocket science, we’re just very careful. We use fresh PEI potatoes and carefully cut them in the truck,” says LeBlanc. “And you get that interaction that you wouldn’t get at another quick serve restaurant, it’s served in brown paper bags, large portions, they get to sit on the wall at the library. People are coming for the interaction as much as the fries.”
