There are two schools of fry thought at work here: there’s the skin-on, hand-cut, load ’em up with salt and vinegar and calories be damned, I’ve died and gone to heaven cult of Bud the Spud, and then there’s what we eat when the Spudwagon’s away for the winter. Walking down Spring Garden, you know it’s not summer until you see a line of people sitting on the low wall in front of the Public Library, rapturous expressions on their faces as they dig in to the deep fried offerings.
