Emma’s Eatery owner Kim Stacey says she wasn’t expecting her fish cakes to be such a big hit. “It was just a small addition to the menu because I wanted something to celebrate my Newfoundland heritage on my dad’s side,” she says. Stacey grew up eating her grandmother’s fish cakes and says it’s not the recipe—it’s how the cakes are cooked. Using the right heat, the right pans, the proper proportion of fish to potatoes—it’s an art. “People just want to taste a part of their heritage,” she says. Mmm, fish! So delish!
