Kathy Hilchey is multi-tasking. She’s finding time to reflect on her 20-year career at John’s Lunch between taking orders and delivering breakfast plates, while her longtime co-workers cut and prepare the morning fish delivery in the back of the restaurant. “It’s a big thrill every year, it doesn’t ever get old,” she says of yet another nod from Coast readers. For Hilchey, the nostalgia factor plays a big part in why people love John’s—from watching their meals be prepared from a seat at the counter, to growing up eating fish and chips. “Like when you watch a kid go from being a baby to bringing their own kids in—kids that had their first french fry here and now they’re taller than me!”
