Steve-O’s manager Katherine Pittman says a lot of time, testing and training goes into the brew. “Steven tests and samples over and over to get the right combination of tastes,” she says. Baristas train in the Steve-O method of steaming milk, and to master the non-automatic (meaning not idiot-proof) espresso machine. Pittman uses words like adjusting, measuring, packing and controlling. All we know is it’s a damn fine cup of joe.
