Bitter End owner Mike Leigh believes his Caesar’s popularity is due to “attention to detail—every Caesar is shaken, so there are no little pockets of Tabasco and every flavour is evenly distributed through the drink. We only use real Clamato juice—it’s more expensive, but it’s worth it.” They don’t skip the horseradish, and the pièce de résistance is a string bean pickled in hot spice, replacing staid celery. “People are addicted to them,” Leigh says.
