This week will brings yet another flavour to remember cafe, bakery and butter-lovers heaven-on-earth, Two if By Sea, by. Since scoring the Business Development Bank of Canada Young Entrepreneur Award’s top prize, the cafe’s co-owner Zane Kelsall's dream of growing the TIBS brand to include a roastery has gotten real. With a home next door to the Dartmouth location of the cafe (70 Ochterloney Street) and a slick new roaster that arrived last week, Anchored Coffee has its game face on, working hard to develop a profile for its debut flavours. “You’re never going to see a dark roast from us,” says Kelsall, taking a break from roasting batch number four last Friday. “What we’re trying to do is roast coffee that’s flavour development is balanced. It’s like eating a steak well done. If you want to be able to taste it for it’s unique qualities, you don’t want to taste cooking want to taste the coffee, not the roast.” Kelsall says he'll drop Anchored— in filter coffee and espresso forms, as well as beans—at TIBS locations this week. It’s looking like this weekend will be a very caffeinated one.
