The truth of the matter is that great atmosphere takes hard work and attention to detail, and Hakan Uluer says the crew at The Bicycle Thief is all over it: “You can have great lighting and music, but if you don’t have hospitality, you don’t have the whole package.” Uluer says you’ll never hear the same playlist at 5pm that you will at 9pm, and that his staff is even thinking about brightness levels in the washrooms, but at the end of the day it just comes down to being observant. “Everything has to come together and simply, it’s all about the details. If the music doesn’t fit the night—if it’s crowded and buzzing and the music is still slow pace—it’s about feeling the room. And that’s the biggest the advantage we have with our managers, they feel the room.”
