Chef and partner Darren Lewis believes it’s the philosophy of Chives that makes it so good. “We try and support local farms, using local product.” Fresh local product plus creativity is how the menu is created. “It’s Maritime cuisine with a twist. Both myself and Craig [Flinn, the other chef/partner] have international experience, so we bring a little of that.” The new spring menu at Chives highlights lamb and “asparagus, here, there and everywhere.”
