Hey Kyle,I just wanted to comment on Leslie Lowes feature of "Think globally, eat locally" of Sept. 20, 2007. Her article should have begun with "He's one of the local food dudes."The article neglected quite a few chefs that I see at the market every Saturday and who actually use the market to supply themselves.Maurizio Bertozzi (Bish, Il Mercato, O mano)Fanny Chen (Cheelin restaurant)Paulo Colbertaldo (Janes on the Common)Craig Flinn (Chives)Sean Gallagher (Terroir)Andy King (Da Maurizio)Réné Lavallé (Five Fish)The chef at Morris East (her name escapes me)These are the people I see the most at the Market.The oldest still continuing user of the market is Fanny of Cheelin.Word on the street is that about 20 years ago she gave Ted Hutten his first Shang-hai bok-choy seeds from her home in China and has since then insired him to grow the variety of asian vegetables he now has.Both Fanny and Paulo use incredible volumes of produce in the market.There are also all of the foodservices inside the market that use the market for themselves (ex. Darren Poirier AKA The Omlette Guy)The list of chefs does not stop there. In Wolfville there is Michael Howell of the restaurant "Tempest" and Jeff Ward of the restaurant "On The Verge". Both are proponents of the Wolfville market and local producers of their area. In the Lunenberg area there is Martin Ruiz of "Fleur de Sel" and Terry Vasello of "La Trattoria de la Nonna". Also heavy market users.Roland Glauser of "Charlotte Lane" in Shelburne is Swiss and believes heavily in the market philosophy.I stock 95%-97% of our restaurant from the farmer's market and local sustainable produce.The Halifax chefs mentioned are the only chefs that come to mind because I actually see them at the market every Saturday.I am also happy to see more and more of the professional cooks of the city at the market.I apologize if I have forgotten one or two chefs.
