L’Acadie was the first in Nova Scotia--- the province’s cooler climate makes it ideal growing grounds---to produce sparkling wine through the traditional method or méthode champenoise: bubbles are created in the bottle rather than injected in afterwards, like carbonated soft drinks. It’s the most time-consuming method, but good things come to those who wait.
