Chef Russell Fairman has his own take on a perennial favourite: “The wing deserves a little respect. We take care of them,” he says. Fairman says he uses fresh oil only and dredges the wings in zippy seasoned flour before they hit the fryer. Secret weapon number two is the sauce: “We make our own hot sauce and suicide sauce—it’s very popular.”
