Preheat oven to 350°F.
Start with the Granny Smith apples. They have the best tart flavour, which goes perfectly with all the sweet to come. Peel each one and slice into segments, taking out the seeds. Toss the apple slices in the cinnamon and white sugar and put on baking sheet in single layers. Bake until soft to the touch, about five to 10 minutes.
While the apples are cooking, whisk together eggs, milk and vanilla. Drench six slices of thick-cut French bread (or sub gluten-free for any allergies) on both sides into the egg mixture.
Bring a frying pan to medium temperature, using butter to fry each side of the dipped bread to a golden crisp.
While French toast is cooking, bring a frying pan to medium temperature and add pecans and brown sugar. Cook slowly, stirring often to coat each pecan in the sugar.
Pick your favorite pre-made caramel sauce (or make it yourself if you're really in the festive spirit) and add to your coated pecans in the pan. Then add your baked apples, mixing everything to coat evenly.
Arrange your French toast on your favorite brunch plates, top with apple pecan mixture, and enjoy every bite.
